Željezo je mineral važan za izgradnju crvenih krvnih zrnaca, prijenos kisika iz pluća u tkiva kao dio hemoglobina (bjelančevina u crvenim krvnim zrncima), te stvaranje mioglobina (bjelančevina koja tijekom velikih napora opskrbljuje organizam dodatnom energijom).
